Cajun Meatball Stew

Ingredients:

1 lb ground beef
1 egg
4 green onions, minced
2 tablespoons parsley, minced
1/2 clove garlic, crushed
1 1/2 cups bread crumbs
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 teaspoons salt
2 tablespoons cold water
1/4 cup vegetable oil

Gravy

Meatball drippings plus vegetable oil (about 1/4 cup)
2/3 cup flour
4 teaspoons instant beef broth
1/3 cup minced parsley
4 green onion tops, sliced thin
5 cups cold water
1/4 teaspoon salt 
black pepper, to taste
Directions:
  1. Make meatballs by combining bread crumbs, parsley, green onions, garlic, egg, salt, peppers, water and beef in a medium bowl. Mix well and shape into about 24 meatballs. Place in refrigerator for thirty minutes.

  2. Heat oil in skillet. Brown meatballs being careful not to overcook. Remove from skillet.

  3. Make gravy by using drippings and adding vegetable oil to skillet. Blend in flour and stir over low heat until flour starts to brown. Do not let flour stick. This may take between 10-15 minutes.

  4. Slowly add water and beef broth stirring constantly (about five minutes). Return meatballs to skillet. Set heat to low and simmer uncovered for about 45 minutes. Stir frequently to prevent sticking.

  5. Add seasonings to taste and serve meatballs and gravy over rice.
