Creole Shrimp Jambalaya

Ingredients:

2 lb medium shrimp
1/2 lb sausage, cut into pieces
8 large onions, chopped
1/2 bell pepper, chopped
2 stalks celery, chopped
2 1/2 cup rice, uncooked
2 tsp vegetable oil
Cajun seasoning (to taste)
Directions:
  1. Saute onions in oil until browned.

  2. Add 1/2 cup of water, bell pepper, celery, shrimp, and sausage. Simmer 20-30 minutes adding water as necessary.

  3. Add rice and 4 cups of water stirring well. Cover and simmer for one hour.
